cream of broccoli soup

  1. bring to boil
    • 4 c. water
    • 4 broccoli florets
  2. reduce heat, cooking an additional 3 minutes
  3. drain, reserving the water
  4. send half of the cooked broccoli in food processor
  5. in large cooking pot, melt
    • 2 T. butter
  6. add
    • 1 or 2 chopped onions
  7. cook 1-2 minutes until soft
  8. stir in
    • ½ c. flour
  9. cook, stirring occasionally 1-2 minutes
  10. add reserved water and
    • 3 T. chicken bouillon
  11. bring to boil, stirring constantly
  12. reduce heat and simmer, stirring constantly until thickened
  13. stir in
    • 2½ c. milk
    • ¼ t. nutmeg
    • ¼ t. black pepper
    • chopped broccoli
  14. heat through
  15. adjust seasons to taste, serve with grated cheese
  • yield: 4-6 servings


oatmeal raisin bread

  1. mix
    • ¼ lb. butter, softened
    • 1/3 c. honey
    • 2 t. salt
    • 1 c. milk, scalded
    • 2 eggs
  2. mix in seperate bowl
    • 2 T. yeast
    • ¼ c. lukewarm water
  3. mix the mixtures together
  4. mix
    • 2 c. flour
    • 1 t. cinnamon
    • 1/2 t. nutmeg
    • 3 eggs
  5. add egg mixture to other mixtures
  6. add
    • 1½ c. rolled oats
    • 1½ c. raisins
    • 1¼ c. flour
    • ½ c. untoasted wheat germ
  7. knead well
  8. let rise until doubled in size
  9. knead again
  10. place in 2 buttered loaf pans
  11. let rise again
  12. bake 40-45 minutes
  • yield: 2 loaves


english muffins in a loaf

  1. combine
    • 3 c. flour
    • 1 T. sugar
    • 2 T. yeast
    • 2 t. salt
    • ¼ t. baking soda
  2. heat until very warm (120°-130°)
    • 2 c. milk
    • ½ c. water
  3. beat mixtures together until well mixed
  4. stir in until stiff batter is made
    • 2½-3 c. flour
  5. place into 2 greased loaf pans, sprinkled with cornmeal
  6. sprinkle tops with
    • cornmeal
  7. cover
  8. let rise in warm place 45 minutes
  9. bake at 400° for 25 minutes
  10. remove from pans and cool
  • yield: 2 loavaes, 16 slices per loaf


squash rolls II

  1. mix
    • 2 T. yeast
    • ½ c. warm water
  2. mix in
    • ½ c. sugar
    • 2 t. salt
    • ½ c. shortening
    • 1 ½ c. shredded squash
    • 1 c. milk
    • 6 c. flour
  3. let rise
  4. bake at 400° until light brown

  1. mix
    • 1 c. warm watter
    • 2 T. yeast
    • ¾ c. sugar
  2. mix in
    • 3 T. salt
    • 1 pkg. squash
    • ½ c. dry milk
    • 1 c. flour
  3. knead in
    • 4-5 c. flour
  4. let rise
  5. bake at 400° until light brown


pretzels

  1. preheat oven to 425°
  2. grease baking sheet
  3. mix
    • 1¼ c. warm water
    • 1 T. yeast
  4. knead in
    • 2 T. sugar
    • 3½-4 c. flour
    • 1½ t. salt
    • 2 T. oil
  5. shape into 24 pretzels and place on prepared baking sheet
  6. brush and sprinkle (optional)
    • milk
    • sea salt
  7. let set 15 minutes
  8. bake 15-20 minutes
  • yield: 24 pretzels


einstein bagels
  1. mix together
    • 2 c. warm water
    • 1 T. yeast
  2. knead in
    • 3 T. corn syrup
    • 2 T. molasses
    • 1 t. oil
    • 2 t. salt
    • 4-5 c. flour
  3. shape into bagels, adding
    • cinnamon sugar
    • jalepeno slices/red pepper flakes
    • garlic
    • chopped onions/poppy seeds
    • cheese
  4. allow to rise
  5. boil
    • water
    • 2 T. sugar
  6. drop bagels in water
  7. flip after 20 seconds
  8. bake 30 minutes on cookie sheet with cornmeal
  • yield: 8 large bagels


hawaiian bread

  1. preheat oven to 375°
  2. spray 3 pie pans
  3. mix together
    • 2 T. yeast
    • 1½ c. warm water
  4. mix in
    • ¾ c. sugar
    • ¾ c. instant potatoes
    • ½ c. butter
    • ½ c. powdered milk
    • 3 eggs
    • 1 t. salt
    • 2 t. vanilla
    • ½ t. ginger
    • 1 c. pineapple juice
    • 6½-7 c. flour in halves
  5. place in pans
  6. bake 25 minutes


Aunt Jane’s Pie Crust

  1. mix
    • 2 c. flour (some cake flour)
    • 1 t. salt
    • 2/3 c. shortening
    • almost 2/3 c. warm water
  2. roll out and place in pie pans
  • yield: 2-3 shells

german chocolate cake
coconut-pecan frosting
  1. beat together
    • 3 egg yolks
    • 1 c. evaporated milk
  2. stir in
    • 1 c. sugar
    • 1/2 c. butter
    • 1 t. vanilla
  3. cook over medium heat about 12 minutes, stiring occasionally, until thick
  4. beat in
    • 1 1/3 c. flaked coconut
    • 1 c. chopped pecans

cake

  1. preheat oven to 350º
  2. grease 2 8×8 pans
  3. mix
    • 1/2 c. boiling water
    • 1 bar (4 oz.) chocolate chips
  4. in seperate bowl, mix
    • 2 c. sugar
    • 1 c. butter
    • 4 egg yolks
    • 1 t. vanilla
  5. beat chocolate mixture in with cream mixture
  6. in seperate bowl, mix
    • 2 1/4 c. flour
    • 1 t. baking soda
    • 1 t. salt
  7. into cream mixture, alternatively mix flour mixture with
    • 1 c. buttermilk
  8. fold in
    • 4 stiffly beaten eggwhites
  9. divide batter between the two pans
  10. bake 45 minutes
  11. cool on wire rack
  12. spread on coconut-pecan frosting
