blueberry streusel muffins

  1. preheat oven to 400º
  2. mix until crumbly, sit aside
    • 1/4 c. flour
    • 2 T. brown sugar
    • 3 T. cold butter
    • 1/4 t. cinnamon
  3. mix
    • 1 c. milk
    • 1/4 c. vegetable oil
    • 1.2 t. vanilla
    • 1 egg
  4. in seperate bowl, mix
    • 2 c. flour
    • 1/3 c. sugar
    • 3 t. baking powder
    • 1/2 t. salt
  5. stir liquid and dry ingredients together
  6. fold in
    • 1 c. blueberries
  7. divide batter evenly among 12 muffin cups
  8. top evenly with streusel
  9. bake 20 minutes or until golden brown
  • may subsitute all-purpose flour with whole wheat flour

topping

  1. combine with fork
    • 1/4 c. butter
    • 1/2 c. sugar
    • 1/3 c. flour
    • 1/2 t. cinnamon
muffins
  1. preheat oven to 375º
  2. sift together, set aside
    • 2 c. flour
    • 2 t. baking powder
    • 1/2 t. salt
  3. cream
    • 1/4 c. butter
    • 3/4 c. sugar
  4. beat in
    • 1 egg
  5. alternatively add flour mixture
    • 1/2 c. milk
  6. fold in
    • 2 c. blueberries
    • 2 T. flour
  7. sprinkle topping over muffins
  8. bake for 1 hour




pineapple oatmeal muffins

topping

  1. mix together
    • 1/4 c. brown sugar
    • 1/4 c. oatmeal
    • 1/4 c. coconut
    • 1/4 c. pecans
    • 2 T. melted butter

oat mixture

  1. mix and let stand for 3 minutes
    • 1 c. oatmeal
    • 8 oz. crushed pineapple
    • 1/2 c. milk
    • 1 egg
  2. stir in 1/4 c. melted shortening

flour mix

  1. combine
    • 1 c. flour
    • 1/2 c. sugar
    • 1/3 c. pecans
    • 1 t. salt
    • 1 T. baking powder

assembly

  1. preheat oven to 400º
  2. mix oat mixture and flour mixture just until moistened
  3. place batter in muffin pan
  4. sprinkle topping over tops
  5. bake 20 minutes


pumpkin-nut muffins

  1. preheat oven to 375º
  2. mix
    • 2 1/3 c. flour (part whole wheat)
    • 2 t. baking powder
    • 2 t. pumpkin spice
    • 2 beaten eggs
    • 3/4 c. sugar
    • 1 1/4 c. pumpkin
    • 2/3 c. oil
    • 1 t. salt
    • 1/3 c. milk
    • 3/4 c. walnuts
    • 3/4 c. raisins
  3. place in muffin tins
  4. bake 20 minutes
  • variation: add strudel topping
