oatmeal raisin bread

  1. mix
    • ¼ lb. butter, softened
    • 1/3 c. honey
    • 2 t. salt
    • 1 c. milk, scalded
    • 2 eggs
  2. mix in seperate bowl
    • 2 T. yeast
    • ¼ c. lukewarm water
  3. mix the mixtures together
  4. mix
    • 2 c. flour
    • 1 t. cinnamon
    • 1/2 t. nutmeg
    • 3 eggs
  5. add egg mixture to other mixtures
  6. add
    • 1½ c. rolled oats
    • 1½ c. raisins
    • 1¼ c. flour
    • ½ c. untoasted wheat germ
  7. knead well
  8. let rise until doubled in size
  9. knead again
  10. place in 2 buttered loaf pans
  11. let rise again
  12. bake 40-45 minutes
  • yield: 2 loaves


baked french toast

  1. preheat oven to 350°
  2. butter a camp pan
  3. arrange in the pan
    • 1 lb. sliced french bread
  4. beat together
    • 8 eggs
    • 2 t. vanilla
    • ¼ t. cinnamon
    • 1 ½ c. milk
  5. pour mixture over bread
  6. heat until boiling
    • 3/4 c. butter
    • 1 1/3 c. brown sugar
    • 3 T. corn syrup
  7. bake in oven 20 minutes


blueberry buckle

cake
  1. preheat oven to 375°
  2. grease an 8-inch springform pan
  3. mix, set aside
    • 2 c. flour
    • 2 t. baking powder
    • 1/2 t. salt
  4. cream until fluffy
    • 1/4 c. butter
    • 3/4 c. sugar
  5. beat in
    • 1 egg
  6. alterate adding flour mixture and
    • 1/2 c. milk
  7. fold in
    • 1 pint blueberries
    • 1-2 T. flour
  8. pour batter into pan

topping

  1. combine
    • 1/4 c. cold butter
    • 1/2 c. sugar
    • 1/3 c. flour
    • 1/2 t. cinnamon

assembly

  1. sprinkle topping over cake
  2. bake 1 hour


blueberry streusel muffins

  1. preheat oven to 400º
  2. mix until crumbly, sit aside
    • 1/4 c. flour
    • 2 T. brown sugar
    • 3 T. cold butter
    • 1/4 t. cinnamon
  3. mix
    • 1 c. milk
    • 1/4 c. vegetable oil
    • 1.2 t. vanilla
    • 1 egg
  4. in seperate bowl, mix
    • 2 c. flour
    • 1/3 c. sugar
    • 3 t. baking powder
    • 1/2 t. salt
  5. stir liquid and dry ingredients together
  6. fold in
    • 1 c. blueberries
  7. divide batter evenly among 12 muffin cups
  8. top evenly with streusel
  9. bake 20 minutes or until golden brown
  • may subsitute all-purpose flour with whole wheat flour

chocolate zucchini cake
  1. cake
  2. preheat oven to 325º
  3. cream together
    • 1/2 c. butter
    • 1/2 c. oil
    • 1 1/2 c. sugar
  4. add
    • 1 egg
    • 1 t. vanilla
  5. in seperate bowl, mix
    • 2 1/2 c. flour
    • 1 t. baking soda
    • 1/2 t. baking powder
    • 1/2 t. salt
    • 1/2 t. cinnamon
    • 4 T. cocoa
  6. in measuring cup, mix
    • 1/2 c. milk
    • 1 T. vinegar
  7. alternatively add dry mix and milk to creamed ingredients
  8. stir in
    • 2 c. grated zucchini
  9. bake 35-40 minutes in 9×13 inch pan
  10. cool before adding icing

icing

  1. heat to boil in large saucepan
    • 1/3 c. chocolate chips
    • 3 T. milk
    • 1 T. butter
  2. remove from heat and add
    • 1/2 t. vanilla
    • dash salt
    • 2 c. or more of powdered sugar

quick coffee cake

topping

  1. mix
    • 2 T. flour
    • 2 T. brown sugar
    • 2 T. softened butter
    • 1/4 t. cinnamon
    • pinch of salt

cake

  1. preheat oven to 350º
  2. combine
    • 1 1/2 c. flour
    • 2/3 c. sugar
    • 1/3 c. brown sugar
    • 1/2 t. baking soda
    • 3/4 t. baking powder
    • 1/2-2 t. salt
    • 1/4 c. shortening
    • 1 t. vanilla
  3. fill measuring cup with
    • 1 egg
    • buttermilk
  4. add buttermilk mixture to dry ingredients
  5. pour into greased 8×8 inch pan
  6. sprinkle with topping
  7. bake for 25-30 minutes
