cream of broccoli soup

- bring to boil
- 4 c. water
- 4 broccoli florets
- reduce heat, cooking an additional 3 minutes
- drain, reserving the water
- send half of the cooked broccoli in food processor
- in large cooking pot, melt
- 2 T. butter
- add
- 1 or 2 chopped onions
- cook 1-2 minutes until soft
- stir in
- ½ c. flour
- cook, stirring occasionally 1-2 minutes
- add reserved water and
- 3 T. chicken bouillon
- bring to boil, stirring constantly
- reduce heat and simmer, stirring constantly until thickened
- stir in
- 2½ c. milk
- ¼ t. nutmeg
- ¼ t. black pepper
- chopped broccoli
- heat through
- adjust seasons to taste, serve with grated cheese
- yield: 4-6 servings

oatmeal raisin bread

- mix
- ¼ lb. butter, softened
- 1/3 c. honey
- 2 t. salt
- 1 c. milk, scalded
- 2 eggs
- mix in seperate bowl
- 2 T. yeast
- ¼ c. lukewarm water
- mix the mixtures together
- mix
- 2 c. flour
- 1 t. cinnamon
- 1/2 t. nutmeg
- 3 eggs
- add egg mixture to other mixtures
- add
- 1½ c. rolled oats
- 1½ c. raisins
- 1¼ c. flour
- ½ c. untoasted wheat germ
- knead well
- let rise until doubled in size
- knead again
- place in 2 buttered loaf pans
- let rise again
- bake 40-45 minutes
- yield: 2 loaves
applesauce fruitcake

- preheat oven to 250º
- boil 5 minutes, cool
- 3 c. applesauce
- 1 c. butter
- 2 c. sugar
- sift together, add to applesauce mix
- 4 1/2 c. flour
- 1 t. salt
- 3 t. baking soda
- 1 t. nutmeg
- 1 t. cloves
- mix in
- 1 lb. dates
- 1 lb. raisins
- cherries
- plenty of pecans
- craisins
- bake about 1 hour in small greased loaf pans
- note: decorate small loaves with cherries and pecans
- yield: 11 small loaves
