mexican cheese soup

  1. heat on stovetop
    • 2 T oil
  2. blend in
    • 2 T. flour
  3. add
    • 1 c. tomatoes
    • 1 T. chili powder
    • 4 c. beef broth
  4. simmer on low 30 minutes
  5. add 1/2 lb. grated cheese


pretzels

  1. preheat oven to 425°
  2. grease baking sheet
  3. mix
    • 1¼ c. warm water
    • 1 T. yeast
  4. knead in
    • 2 T. sugar
    • 3½-4 c. flour
    • 1½ t. salt
    • 2 T. oil
  5. shape into 24 pretzels and place on prepared baking sheet
  6. brush and sprinkle (optional)
    • milk
    • sea salt
  7. let set 15 minutes
  8. bake 15-20 minutes
  • yield: 24 pretzels


einstein bagels
  1. mix together
    • 2 c. warm water
    • 1 T. yeast
  2. knead in
    • 3 T. corn syrup
    • 2 T. molasses
    • 1 t. oil
    • 2 t. salt
    • 4-5 c. flour
  3. shape into bagels, adding
    • cinnamon sugar
    • jalepeno slices/red pepper flakes
    • garlic
    • chopped onions/poppy seeds
    • cheese
  4. allow to rise
  5. boil
    • water
    • 2 T. sugar
  6. drop bagels in water
  7. flip after 20 seconds
  8. bake 30 minutes on cookie sheet with cornmeal
  • yield: 8 large bagels


Crunchy Cabbage Salad
salad
  1. place in bowl
    • 1/2 large head of shredded cabbage
    • 1 can sliced water chestnuts (optional)
    • chopped onions to taste
    • 1/2 c. slivered almonds
    • 1 T. sesame seeds
    • 1/2 c. sunflower seeds

dressing

  1. mix
    • 2 T. sugar
    • 3 T. vinegar
    • 1/2 t. pepper
    • 1/3 c. oil
    • 1 pkg. ramen flavoring

assembly

  1. Top salad with
    • 1 pkg. crushed ramen noodles
  2. Pour dressing over noodles

hot fudge cake

  1. preheat oven to 350º
  2. in medium bowl, combine
    • 1 c. flour
    • 3/4 c. sugar
    • 2 T. cocoa
    • 2 t. baking powder
    • 1/4 t. salt
  3. stir in until smooth
    • 1/2 c. milk
    • 2 T. oil
    • 1 t. vanilla
  4. spread in an ungreased 9 inch baking pan
  5. in a sperate bowl, combine
    • 1 c. brown sugar
    • 4 T. cocoa
  6. sprinkle sugar-cocoa mix over batter
  7. pour over cake without stirring
    • 1 3/4 c. hot water
  8. bake 35-50 minutes
  • yield: 9 servings


chocolate zucchini cake
  1. cake
  2. preheat oven to 325º
  3. cream together
    • 1/2 c. butter
    • 1/2 c. oil
    • 1 1/2 c. sugar
  4. add
    • 1 egg
    • 1 t. vanilla
  5. in seperate bowl, mix
    • 2 1/2 c. flour
    • 1 t. baking soda
    • 1/2 t. baking powder
    • 1/2 t. salt
    • 1/2 t. cinnamon
    • 4 T. cocoa
  6. in measuring cup, mix
    • 1/2 c. milk
    • 1 T. vinegar
  7. alternatively add dry mix and milk to creamed ingredients
  8. stir in
    • 2 c. grated zucchini
  9. bake 35-40 minutes in 9×13 inch pan
  10. cool before adding icing

icing

  1. heat to boil in large saucepan
    • 1/3 c. chocolate chips
    • 3 T. milk
    • 1 T. butter
  2. remove from heat and add
    • 1/2 t. vanilla
    • dash salt
    • 2 c. or more of powdered sugar

pumpkin-nut muffins

  1. preheat oven to 375º
  2. mix
    • 2 1/3 c. flour (part whole wheat)
    • 2 t. baking powder
    • 2 t. pumpkin spice
    • 2 beaten eggs
    • 3/4 c. sugar
    • 1 1/4 c. pumpkin
    • 2/3 c. oil
    • 1 t. salt
    • 1/3 c. milk
    • 3/4 c. walnuts
    • 3/4 c. raisins
  3. place in muffin tins
  4. bake 20 minutes
  • variation: add strudel topping
