german chocolate cake
coconut-pecan frosting
  1. beat together
    • 3 egg yolks
    • 1 c. evaporated milk
  2. stir in
    • 1 c. sugar
    • 1/2 c. butter
    • 1 t. vanilla
  3. cook over medium heat about 12 minutes, stiring occasionally, until thick
  4. beat in
    • 1 1/3 c. flaked coconut
    • 1 c. chopped pecans

cake

  1. preheat oven to 350º
  2. grease 2 8×8 pans
  3. mix
    • 1/2 c. boiling water
    • 1 bar (4 oz.) chocolate chips
  4. in seperate bowl, mix
    • 2 c. sugar
    • 1 c. butter
    • 4 egg yolks
    • 1 t. vanilla
  5. beat chocolate mixture in with cream mixture
  6. in seperate bowl, mix
    • 2 1/4 c. flour
    • 1 t. baking soda
    • 1 t. salt
  7. into cream mixture, alternatively mix flour mixture with
    • 1 c. buttermilk
  8. fold in
    • 4 stiffly beaten eggwhites
  9. divide batter between the two pans
  10. bake 45 minutes
  11. cool on wire rack
  12. spread on coconut-pecan frosting

applesauce fruitcake

  1. preheat oven to 250º
  2. boil 5 minutes, cool
    • 3 c. applesauce
    • 1 c. butter
    • 2 c. sugar
  3. sift together, add to applesauce mix
    • 4 1/2 c. flour
    • 1 t. salt
    • 3 t. baking soda
    • 1 t. nutmeg
    • 1 t. cloves
  4. mix in
    • 1 lb. dates
    • 1 lb. raisins
    • cherries
    • plenty of pecans
    • craisins
  5. bake about 1 hour in small greased loaf pans
  • note: decorate small loaves with cherries and pecans
  • yield: 11 small loaves


strawberry pie

crust

  1. mix
    • 1/4 c. brown sugar
    • 1/3 c. pecans
    • 1/2 c. butter
    • 1 c. flour
  2. pack in pan to form crust

topping

  1. cook until thick, then cool
    • 3 c. water
    • 4 T. cornstarch
    • 1 c. sugar
    • 2 t. lemon juice
    • 2 small boxes strawberry jello
  2. add
    • 4 c. fresh sliced strawberries

assembly

  1. pour strawberry mix onto crust
  2. chill until firm


pineapple oatmeal muffins

topping

  1. mix together
    • 1/4 c. brown sugar
    • 1/4 c. oatmeal
    • 1/4 c. coconut
    • 1/4 c. pecans
    • 2 T. melted butter

oat mixture

  1. mix and let stand for 3 minutes
    • 1 c. oatmeal
    • 8 oz. crushed pineapple
    • 1/2 c. milk
    • 1 egg
  2. stir in 1/4 c. melted shortening

flour mix

  1. combine
    • 1 c. flour
    • 1/2 c. sugar
    • 1/3 c. pecans
    • 1 t. salt
    • 1 T. baking powder

assembly

  1. preheat oven to 400º
  2. mix oat mixture and flour mixture just until moistened
  3. place batter in muffin pan
  4. sprinkle topping over tops
  5. bake 20 minutes


butterscotch oatmeal cookies
  1. preheat oven 375º
  2. cream
    • 1 c. shortening
    • 3/4 c. brown sugar
    • 3/4 c. sugar
  3. add
    • 2 eggs
    • 1 t. vanilla
    • 1 T. hot water
  4. add
    • 1 1/2 c. flour
    • 1 t. baking soda
  5. mix in
    • 1/2 c. walnuts or pecans
    • 2 c. oatmeal
    • 1 package butterscotch chips
  6. bake 10-12 minutes


linda’s lace cookies

  1. preheat oven to 350º
  2. mix until very soft
    • 1/4 c. butter
    • 1/2 c. brown sugar
    • 1/2 c. turbinado sugar
  3. add
    • 1 egg
    • 1/2 t. vanilla
  4. stir in
    • 1 T. flour
    • 1 c. finely chopped walnuts or pecans
  5. drop batter by teaspoons onto cookie sheet
  6. bake 7-8 minutes
  • yield: 3 dozen cookies

  1. preheat oven to 350º
  2. Cream
    • 1/4 c. shortening
    • 3/4 c. sugar
  3. Blend in
    • 1 1/2 c. flour
  4. Press evenly in bottom of ungreased baking ban
  5. Bake 12-15 minutes
  6. Mix
    • 2 eggs
    • 1 c. brown sugar
    • 2 T. flour
    • 1/2 t. baking powder
    • 1/2 t. salt
    • 1/2 t. vanilla
    • 1 c. pecans
  7. spread mix over baked crust
  8. bake 20 minutes
  • yield: 32 cookies
